Hamburger Minestrone Soup image

This was one of my husbands favorite recipes. A salad and crusty bread make a whole meal. I've used ground turkey in place of the ground beef and it's still delicious. It's quick to make and can be tweeked easily. I sometimes use barley instead of rice. Can do in the slow cooker if you wish. Enjoy.

Number Of Ingredients 14

1 lb lean ground beef or turkey
1 c onions, chopped
1 c potatoes, chopped
1 c carrots, chopped
1/2 c celery, chopped
1/2 c green cabbage
2 1/2 c canned stewed tomatoes, undrained & broken up
1/4 c uncooked white rice
1 bay leaf
1/2 tsp dried thyme
1/4 tsp dried basil
5 tsp salt (adjust to taste)
1/2 tsp pepper
6 c water

Steps:

  • 1. Cook beef with onion until slightly browned. Add potatoes, carrots, celery, cabbage and tomatoes. Bring to boil.
  • 2. Sprinkle in rice, add bay leaf, thyme, basil, salt, pepper & water.
  • 3. Cover and simmer 1 hour.
