Steps:
- 1. Place onion, celery, carrots, garlic and ham in large soup pot with about 1 tbls of olive oil. Simmer till veggies are tender. If using leftover ham, add once veggies are tender.
- 2. Add chicken stock to pot and spices bring to a boil, reduce heat and add potatoes. Cook on a low boil for about 20-30 min till potatoes are tender.
- 3. Once potatoes are tender reduce heat to warm. Add cheese if desired. Mix 1/4 c. of masa to 1 c. of hot liquid from soup and mix well to remove lumps. REturn back to soup and mix in to thicken broth.
