Ham -n- Cheese Potato Casserole image

5-7 large russet potatoes
1/2 onion
1/2 cup green bell pepper
1 stick butter
1 can cream of mushroom soup
1/2 cup milk
4 oz (1/4 of 16 oz. block) Kraft Velveeta Cheese Block
1 lb chopped ham
3/4 cup bread crumbs

Steps:

  • Peel & cube potatoes & boil until soft; drain. Sautee onion & bell pepper in butter until tender. Add can cream of mushroom & milk over low heat. Add few cubes of Velveeta Cheese at a time & stir constantly until melted (add more or less cheese for taste). Sauce should be creamy & easy to pour (add milk if necessary).
  • Combine cooked potatoes, cubed ham, & sauce in medium casserole dish. Season to taste. Cover with bread crumbs.
  • Bake at 350 degrees F for approx 20 minutes...until bread crumbs are slightly browned.
