Steps:
- 1. Heat oil in heavy skillet. 2. Add stock and sweet potatoes and cook over medium heat until liquid evaporates and potatoes are tender. 3. Add the onion and ham and continue cooking for 30 minutes until hash is golden brown. Season to taste with salt and pepper. 4. Cut english muffins into quarters and arrange in teepee fashion. Top with hask and poached eggs.
