HALIBUT WITH TOMATOES AND GINGER image

Number Of Ingredients 8

4 (6-oz.) halibut fillets
3 tbs. olive oil
3 tbs. butter
1/2 c. basil leaves, chopped
2 cloves garlic, minced
1 c. tomatoes, diced
juice of 1 lemon
salt and pepper

Steps:

  • 1. Heat the oil in a large skillet, cook the halibut for 1 minute on each side. 2. Add the garlic, butter, tomatoes, basil and lemon juice to the skillet. Simmer for 2 minutes, salt and pepper to taste. 3. Spoon the sauce on the bottom of each serving plate. Place the fish on the top and garnish with a sprig of fresh basil. Serve with a timbale of saffron rice.
