Half-Cup Cookies image

These crunchy drop cookies are nutritious enough for an on-the-go breakfast, when coupled with a glass of milk.

Number Of Ingredients 16

2 cups whole wheat flour
1 teaspoon baking powder
¾ teaspoon salt
1 teaspoon ground cinnamon
2 eggs
¼ cup milk
½ teaspoon vanilla extract
½ cup peanut butter
½ cup honey
½ cup granola
½ cup packed brown sugar
½ cup butter, softened
½ cup semisweet chocolate chips
½ cup chopped walnuts
½ cup flaked coconut
½ cup raisins

Steps:

  • Combine flour, baking powder, salt, and cinnamon; set aside.
  • In large bowl, beat eggs, milk, and vanilla. Beat in peanut butter, honey, brown sugar, and butter until creamy.
  • Stir in flour mixture until well blended. Stir in chocolate chips, nuts, coconut, raisins, and granola until blended.
  • Drop batter by heaping spoonful 1 inch apart on lightly greased baking sheets. Bake at 375 degrees F (190 degrees C) for 10 minutes until golden on bottom. Cool on rack.
