Steps:
- 1. Trim and dry stew meat.
- 2. Heat a bit of oil in a large pot. Add meat and brown.
- 3. Add sliced carrots.
- 4. Add Guinness until meat and carrots are covered.
- 5. Simmer for about one hour. Check to make sure meat is tender and to your liking.
- 6. Add onions and thyme. Continue to simmer for 30 more mins.
- 7. Mix flour and water in a bowl until smooth.
- 8. Slowly add to the stew and cook until thickened.
- 9. Now add honey, a little at a time, salt, and pepper. Taste and adjust seasonings.
- 10. Serve over mashed potatoes.
