Steps:
- Prepare grill to med-high. Combine olive oil, onion and zucchini in large bowl. Sprinkle with 1/4 tsp salt and 1/4 tsp pepper, toss gently to coat. Arrange vegies in a single layer on a grill rack and grill 4 minutes per side or until zucchini is tender. Remove zucchini and cook onion an additional 5 minutes. Combine cooked vegies with vinegar in bowl. Sprinkle with remaining 1/4 tsp salt, 1/4 tsp pepper, parmesan cheese and mint.
