GRILLED ZUCCHINI AND RED ONIONS image

Number Of Ingredients 8

1 Tbl olive oil
4 (1/2 inch thick) slices red onion (one large)
2 lbs. small zucchini, cut lengthwise into 1/4 " slices
1/2 tsp kosher salt, divided
1/2 tsp ground pepper, divided
2 Tbl red wine vinegar
1/3 cup shaved fresh Parmigiano-Reggiano cheese
2 Tbl fresh mint

Steps:

  • Prepare grill to med-high. Combine olive oil, onion and zucchini in large bowl. Sprinkle with 1/4 tsp salt and 1/4 tsp pepper, toss gently to coat. Arrange vegies in a single layer on a grill rack and grill 4 minutes per side or until zucchini is tender. Remove zucchini and cook onion an additional 5 minutes. Combine cooked vegies with vinegar in bowl. Sprinkle with remaining 1/4 tsp salt, 1/4 tsp pepper, parmesan cheese and mint.
