GRILLED TUNA WITH PINEAPPLE-NECTARINE SALSA image

Number Of Ingredients 16

1 pound Ahi grade Tuna
Marinade:
1 teaspoon grated lime zest
2 tablespoons fresh lime juice
2 tablespoons fresh orange juice
1 tablespoon snipped fresh cilantro
1 teaspoon canola or corn oil
1/4 teaspoon salt
1/8 teaspoon pepper
Pineapple-Nectarine Salsa
1 medium nectarine, diced
8 ounce can pineapple tidbits in their own juice
1 medium kiwifruit peeled and diced
2 tablespoons diced red onion
1 tablespoon snipped fresh cilantro
1 teaspoon fresh lemon juice

Steps:

  • Combine marinade ingredients in large resealable bag. add fish. Seal bag and turn to coat. Refrigerate 15 min to 1 hour, turning occasionally. Combine Salsa ingredients in a medium bowl. cover and refrigerate. Preheat pan medium/high. Grill fish 5 to 7 minutes per side or until it is cooked through and flakes easily with a fork. Place fish on plate and top with salsa. Roasted Garlic couscous goes well with this preparation.
