Grilled Tomatoes image

Number Of Ingredients 8

2 large, red ripe tomatoes, about 1 pound
Salt to taste if desired
Freshly ground pepper to taste
1/4 cup fine fresh bread crumbs
1 tablespoon finely chopped pars-ley
1 teaspoon finely minced garlic
2 teaspoons olive oil
2 tablespoons finely chopped shal-lots

Steps:

  • Preheat grill to high.
  • Cut away and discard the core of each tomato. Cut tomatoes crosswise through the center. Sprinkle with salt and pepper.
  • Combine bread crumbs, parsley, garlic, olive oil and shallots in a small mixing bowl. Blend well.
  • Top each tomato half with an equal portion of the crumb mixture, pressing down with the fingers to distribute the topping evenly. Arrange tomato halves on a baking dish. Place them about 8 inches from the source of heat and let cook about 5 minutes.
