Grilled Romaine with Bacon and Blue image

2 heads romaine lettuce
4 slices bacon
1/2 cup blue cheese
1/4 - 1/2 cup balsamic vinegar
1/4 - 1/2 cup olive oil
1/4 cup avocado
1 roma tomato
1/2 cup onion - thin slices

Steps:

  • Brush olive oil and salt/pepper the romaine halves
  • Fry bacon and onion in a pan - remove from pan
  • drain all but a bit of grease from pan - add a tablespoon of oil
  • Add balsamic vinegar and reduce
  • Meanwhile, place romaine on grill at medium heat for 2-4 mins until a little charred and wilted.
  • sprinkle with chopped avocado, tomato, bacon and onions
  • Drizzle vinaigrette over
