GRILLED CORN SALAD WITH BLACK BEANS & RICE image

Number Of Ingredients 14

2/3 cup short grain brown rice
One 15 oz. can black beans, drained and rinsed
3 large ears corn, husked
2 medium red onions, cut into thick slices
1 bell pepper, quartered lengthwise
1 small ripe avocado
1/2 cup hot tomato salsa, chipotle
1/2 cup fresh orange juice
1/3 cup fresh lime juice
3 T. chopped fresh cilantro
1 T. canola oil
3/4 teaspoon ground cumin
salt & pepper
baked tortilla chips

Steps:

  • Cook rice. Toss with beans and set aside. Grill corn, onions, peppers until charred, 10 minutes. Cut kernels from cobs and dice peppers and half of onions. Add to rice. Peel and dice avocado and add. Whisk salsa, juices, cilantro, oil, and cumin. Top salad with sliced avocado and the rest of the onions.
