GRILLED CHILES RELLENOS image

SEASONED SOUR CREAM:
1 cup sour cream
2 tablespoons lime juice
1/2 cup minced fresh cilantro
PREP PROTIEN:
1 lb cooked chicken, shredded or diced
SAUTE:
1 small sweet onion
1 tablespoon oil (of your choice)
1 clove garlic
1 small yellow summer squash, diced
1 small zucchini, diced
1 jalapeno pepper, finely diced
4 canned chipotle peppers, diced
1 can black beans (15 oz)
1 cup frozen corn
1 teaspoon ground cummin
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup Mexican cheese
GRILL:
5 large poblano peppers, halved and seeded

Steps:

  • SEASONED SOUR CREAM: 1. Combine sour cream, lime juice, 1/2 cilantro and refrigerate until serving PREP PROTEIN: 2. Cook chicken and shred or dice SAUTE: 3. Saute onion, garlic in oil, 4. Add squash, zucchini and jalapeno. 5. Stir in beans, corn, cumin, salt and pepper and cook until browned and 1/2 cooked. 6. Add 1/2 cheese GRILL: 7. Spoon into pepper halves 8. Grill for 15 minutes SERVE: 9. Serve topped with remaining cilantro, cheese and seasoned sour cream. 10. Serve with Mexican rice or other side.
