Green Chile Crustless Quiche image

I've had this recipe since the early 80's and it never fails. Great for brunches and is even good at room temperature.

Number Of Ingredients 8

2 can(s) (4.5 oz each) diced green chiles
1 pound(s) monterey jack cheese, shredded
1/4 pound(s) cheddar cheese, shredded
5 eggs, beaten
1/2 cup(s) milk
1/2 teaspoon(s) dry mustard
1/4 cup(s) flour
1 teaspoon(s) baking powder

Steps:

  • Preheat oven to 400F. Grease a 9x13 baking pan.
  • Combine chiles and cheeses in a small bowl, then pour into the prepared baking dish. In a separate bowl, mix the eggs, milk, dry mustard, flour and baking powder. Pour over the cheese mixture.
  • Bake for 15 minutes, then turn the oven temperature down to 300F. Continue baking for 20 more minutes and remove from the oven.
