GREEN BEANS, RED ONIONS & MINT SALAD image

Yield 4-6 people

Number Of Ingredients 8

1 clove garlic crushed with side of knife
1/3 cup finely chopped mint
1 1/2 lbs. fresh green beans
3 tbsp olive oil
1 small red onion (approximately 1/4 cup)cut into small wedges
2 cups cherry tomatoes cut in halves
1/4 tsp. kosher salt
1/4 ground pepper

Steps:

  • In a large pot bring salted water to boiling. In the meantime, rub salad bowl with garlic and reserve the rest of the garlic for another time. Add the mint to the bowl Add green beans to the boiling water and return to boil. Cook beans covered for 6-8 minutes ot until tender but still bright green. Drain beans immediately. Add the hotbeans to the mint and toss together. Then add olive oil and toss. Finally add onion, tomotoes, salt & pepper and toss. Serve warm or room temperature.
