Granola Flax Apple Crisp image

This recipe is adapted from one I found here on the 'zaar. I lightened it up to be gluten free, sugar free and it's lighter.

6 cups apples, sliced
1 teaspoon stevia
2 tablespoons lemon juice
1/2 cup gluten-free granola cereal
1 teaspoon stevia
1/4 cup brown rice flour
1/4 cup tapioca flour
1/4 cup flax seed, golden
1 teaspoon ground cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 350F degrees.
  • Place apples in a buttered 2-quart casserole dish.
  • Sprinkle with stevia and lemon juice.
  • In a small bowl, combine granola , stevia, flour, cinnamon and flax.
  • Cut butter into mixture until the mixture is crumbly.
  • Sprinkle over the apples.
  • Bake for 40 minutes or until apples are tender.
  • If you are gluten intolerant, look on the label of the granola you are using to make sure wheat hasn't been added.
  • The flax seed gives a nice, nutty crunch.
