Grandmother O'Brien's Banana Bread image

My grandmother, from Newfoundland, made this delicious banana bread for us when we were growing up; I haven't changed a single thing and it reminds me of her whenever I smell it baking in the oven, especially on a cold, snowy winter day!

Number Of Ingredients 7

2 - eggs
3/4 cup(s) sugar
1/4 cup(s) butter (softened)
1/2 cup(s) bananas (mashed)
2 cup(s) all purpose flour
1/4 teaspoon(s) baking powder
3/4 cup(s) walnut pieces

Steps:

  • Preheat oven to 350 degrees
  • Lightly grease loaf pan (or use 18 muffin liners)
  • In large bowl, mix together the eggs, sugar and butter. When thoroughly mixed, add mashed bananas.
  • In small bowl, combine the flour, baking powder and baking soda. Slowly fold into the banana mix. If desired, add ¾ cup of walnut pieces. Pour mixture into lightly greased loaf pan. Bake for 1 hour.
