Grandma's Zucchini Bread image

This is a family recipe that was taught to us by Grandma Betty. We always shredded the zucchini in the late summer and would freeze it for making this at Christmas time for the family. Grandma would make sure each family would get a loaf. I now carry that tradition by giving as Christmas presents to family and friends.

WET MIX
4 1/2 c sugar
2 c oil
4 c zucchini
2 Tbsp vanilla extract
6 large eggs
DRY MIX
2 c walnuts (optional)
6 c all purpose flour
2 tsp salt
2 tsp baking soda
2 1/2 tsp baking powder
2 tsp nutmeg
2 Tbsp cinnamon

Steps:

  • 1. Preheat oven to 350 Grease and flour glass loaf pans (3-4 pans)
  • 2. Mix Oil , Sugar , Zucchini and vanilla together.
  • 3. Beat Eggs well and then add to oil , sugar mix .
  • 4. Mix and then sift dry ingredients together. Slowly add dry mix to wet mix. Mix until no lumps remain .
  • 5. Fill glass loaf pans (greased and floured) to about 2/3 full.
  • 6. Bake at 350 for 1 hour or until centers are done. I usually insert a butter knife and if it comes out clean , it's done. Let cool in pans.
