Grandma Mabel's Oatmeal Cake image

This recipe is from my husband's grandmother Mabel. Everytime I make it I'm asked for the recipe.

Number Of Ingredients 21

COMBINE & LET STAND FOR 20 MINUTES
1 1/2 c quick cooking oats
2 1/4 c boiling water
CREAM:
1 1/2 stick butter, softened
1 1/2 c white sugar
ADD:
1 1/2 c brown sugar, firmly packed
3 eggs, beaten
ADD OATS AND THE FOLLOWING SIFTED TOGETHER:
2 c flour
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
3/8 tsp salt
ADD:
1 1/2 tsp vanilla extract
ICING:
1 1/2 c brown sugar, firmly packed
1 1/2 c coconut, shredded
1/2 c heavy cream
6 tsp butter, melted

Steps:

  • 1. Bake 50 minutes at 350 degrees in well greased and floured 9 x 11 or 9 x 13 pan.
  • 2. After cake cools add icing (see above) and broil for a few minutes until bubbly and golden brown.
