Steps:
- Wash potatoes and do not peel. Skin can go in. in a blender or food processor, inset quartered potatos and process at chop/mix speeds, unitl coarse shreds. Mix in flour, salt and pepper. Let stand for 40 minutes and use spoon to remove liquid (as much as possible). Fry until crispy golden brown in 1/2 inch of olive oil. Wick up grease by placing latkes on bed of paper towel. Put on platter and keep warm in oven at 300 degrees
