Golden Carrot Ring image

Number Of Ingredients 7

2 pounds Carrots
1/4 cup Small onion (chopped)
1/2 stick Butter
1/4 cup Chopped parsley
1 1/2 teaspoon Salt
1/4 teaspoon Pepper
2 package Frozen peas (for garnish)

Steps:

  • Cook carrots and mash. Cook the carrots as you would cook potatoes for mashed potatoes, except the carrots seem to take longer to cook until soft than potatoes do.
  • Stir onions, parsley, salt and pepper into mashed carrots.
  • Press carrots into a well buttered ring mold; (This can be done ahead of time or prepared and frozen ahead of time); chill
  • Bake at 325 degrees for 30 minutes.
  • Unmold onto heated serving platter; fill empty center with cooked peas.
