Godiva Biscotti image

WOW, these small biscotti are packed with the most wonderful flavor!. These grand cookies are crammed with nuts so you get the crunch of the cookie part and also from the nuts. I melted some white chocolate chips and bittersweet chocolate to dip them in. They are easy to make, slice nicely (no crumbling) and the timing given is good. I did give them 2 mins extra to get a golden finish on them.

2 cup(s) all-purpose flour
1 teaspoon(s) baking powder
1 pinch(es) sea salt
3 large eggs
1/4 cup(s) sugar
3/4 cup(s) brown sugar
1 - orange, rind of, grated
4 teaspoon(s) godiva original chocolate liqueur
1 cup(s) almonds, coarsely chopped or sliced
3/4 cup(s) hazelnuts, chopped
3/4 cup(s) pine nuts
1 large egg, lightly beaten (for egg wash)
- godiva original chocolate liqueur, as needed

Steps:

  • Sift together the flour, baking powder and salt, set aside.
  • Beat the eggs until light colored then add the sugar gradually and beat until the mixture is ribbon like when lifted, about 10 minutes. Stir in the orange rind and Godiva Liqueur. Add the sifted ingredients and blend on low speed until incorporated.
  • Add the nuts and fold in until mixed throughout.
  • Flour your hands lightly and form 3 long strips, each 12 inches long and 2 inches wide. Place on a buttered baking sheet and brush with the egg wash.
  • Bake in a preheated 350-degree oven for 20 minutes until lightly golden. Remove from the oven, and using a serrated knife, cut diagonally into 3/4 inch slices at once.
  • Lay the slices on their sides on a sheet pan, return to the oven and bake for 6 minutes or until golden brown. Turn them over and brown again for the sale amount of time. Remove from the oven, cool and store in a tightly covered container.
  • Drizzl with additional Godiva Liqueur before serving.
