GOAT CHEESE SANDWICHES WITH ROASTED PEPPERS & ONION JAM image

Yield 4 sandwiches

Number Of Ingredients 11

2 t olive oil
3 c thinly sliced onions
1 1/2 T balsamic vinegar
1 1/2 T currants
1/8 t salt
1/8 t freshly ground pepper
1 16-20" baguette
4 oz. creamy goat cheese
2 T black olive spread
1 7 oz jar roasted red peppers, drained and sliced
1 1/2 c arugula leaves

Steps:

  • In a heavy nonstick skillet, heat oil over low heat. Add onions and cook, stirring often, until they are very tender and light golden, 15-20 minutes. (Add 1-2 T of water if they are browning too quickly). Remove from the heat and stir in vinegar, currants, salt and pepper. Let cool. (The onion jam an be prepared ahead and refrigerated for up to 4 days). Slice the baguette into 4 equal lengths. Split each piece horizontally. Spread the bottoms with goat cheese and the tops with olive spread. Spoon onion jam over the goat cheese, spreading evenly. Top with roasted peppers and arugula. Set the bread tops on the sandwiches.
