Steps:
- Bring pot of water to boil and add eggs. Reduce to medium and simmer for 6 minutes. Remove and run under cold water then peel.
- Return water in pot to boil and add salt. Add gnocchi and cook until they float. Add peas and return to boil, then stir in arugula. Drain and reserve 3/4 cup water.
- Melt butter in pot. Add onion and cook til translucent Add cream, cheese, and 1/4 cup reserved pasta water and simmer 1 min. Add gnocchi and simmer for 30 seconds. Add additional water as needed to create creamy sauce. Season with salt, pepper, and halved eggs.
