GLUTEN-FREE GROWN UP MAC N' CHEESE image

Number Of Ingredients 9

1 Box Quinoa Pasta Shells
1/2 Stick Butter, salted
3 Tbl Spoons Olive Oil
1/2 Cup Dry White Wine
1/2 Cup Garlic Cloves
1 Tsp Course Ground Sea Salt
2 Lbs Venison Sausage
1/2 Lb Aged Cheddar Cheese, Cut to 1" Cubes
1/2 Cup Porcini Mushrooms, Sliced

Steps:

  • Set oven to 325. Cook Quinoa pasta for 1/2 the time instructed on packaging. Approx. 3-4 minutes. While cooking pasta, fry sausages in olive oil, when cooked, slice into small chunks and saute with the garlic, mushrooms, and sea salt. Approx 10 minutes. Drain Pasta and combine pasta and sauteed ingredients in a large bowl. Mix in wine, butter, and cheese stir gently to coat all pasta. Pour all into a cassarole dish (lined with foil if you like, or just oiled with olive oil.) Bake for 40 minutes, stirring twice. Broil for 2 minutes on high and serve.
