Glazed Mini Meatloaf image

Topped with spicy glaze these juicy, healthy mini meat loaves are an inexpensive meal that your family will love.

1/2 cup quinoa
1 1/2 cups water
400 g ground beef
1 egg
1/4 cup breadcrumbs, homemade
1 teaspoon dried basil
sea salt
black pepper
granulated garlic

Steps:

  • Rinse quinoa thoroughly with hot water and cook in 1 ½ cup of water for about 20 minutes.
  • Mix and combine until uniform ground meat, cooked quinoa, egg, bread crumbs and spices.
  • Shape the mixture into 4 oval loaves, flatten them a little and place on a baking sheet lined with parchment paper.
  • Brush the mini meatloaves with glaze and bake in the oven for 35 minutes at 200°C.
  • Glaze: mix ketchup and mustard until smooth.
  • Serve with mashed potatoes and seasonal salad.
