Ginger Soy Chicken with XO sauce reduction image

I love Asian flavors and have a lot of condiments and sauces on hand. I came up with this to try XO sauce into a dish. XO sauce can be bought on Amazon or at fine Asian markets. You can make your own also. There are many recipes on the internet. You could eliminate it all together and still have yummy chicken wings.

1 1/2 lb chicken wings
1 Tbsp oil
1 inch piece ginger grated
4 clove garlic minced
2 Tbsp soy sauce
3 Tbsp sweet soy sauce
1/2 tsp white pepper
1 tsp sesame oil
1/2 c water
XO SAUCE REDUCTION
1 Tbsp eel sauce
1 tsp chili garlic paste
2 Tbsp brown sugar
1 Tbsp xo sauce
1 tsp yuzu or lime juice
4 stalk(s) green onions large chop

Steps:

  • 1. Add oil to a large pot. Add the chicken and sear in batches until browned on all sides. Remove chicken to a plate. Add the ginger and garlic and cook 1 minute. Add the chicken back to the pot and add the soy sauce, sweet soy sauce, white pepper, sesame oil, and water. Bring to a boil. Reduce heat to a simmer and simmer about 20 minutes until chicken is done. Remove chicken to a plate and keep warm.
  • 2. To the pan drippings add the eel sauce, chili garlic paste, XO sauce, brown sugar and yuzo or lime juice. Bring to a boil and let reduce to a thick syrup texture. Add the chicken back to the pan and stir well. Add the green onions and stir.
  • 3. Serve immediately.
