GINGER CRUSTED SALMON image

Number Of Ingredients 11

2 cups cubed cateloupe
1 cup cubed honeydew
1/4 c fresh cilantro leaves finely chopped
2 T fresh mint leaves finely chopped
1 jalapeño stemmed seeded and finely chopped
2 T fresh lime juice
Salt and pepper
2 T grated peeled ginger
2 tsp curry powder
4 pieces skinless salmon filet ( 6 oz each)
2 tsps vegie oil

Steps:

  • 1. In med bowl combine cantaloupe, honeydew, cilantro, mint,jalapeño, salt stirring set aside 2. in small bowl combine ginger, curry powder 1/8 tsp salt and 1/2 tsp freshly ground black pepper Spread mixture evenly all over flesh side of each filet 3. In 12 in nonstick skillet on med heat oil 1 min. Add salmon flesh side down and cook 10 mins r until salmon just turns opaque turning over once. Serve salmon with melon salsa
