Ghirardelli Chocolate Zucchini Nut Bread image

I am always looking for creative ways to use the fresh vegetables as they come out of the garden. This chocolate bread is always a hit and no one ever guesses that there is zucchini in it.

DRY INGREDIENTS
2 1/2 c flour
1 tsp baking soda
1/2 tsp cinnamon
4 Tbsp ghirardelli chocolate unsweetened cocoa
CREAMED INGREDIENTS
1 1/4 c sugar
1/2 c softened margarine
1/2 c canola oil
1 tsp vanilla
2 eggs
ADD
1/2 c buttermilk
1 c pecans, chopped
3/4 c mini semi-sweet chocolate chips
2 c grated zucchini

Steps:

  • 1. Mix all dry ingredients together in bowl.
  • 2. In separate bowl, cream sugar, margarine, oil, vanilla and eggs. Add dry ingredients.
  • 3. Mix in buttermilk, pecans, chocolate chips and zucchini.
  • 4. Pour into two greased and floured loaf pans. Cook at 325 degrees for approximately 50-60 minutes until toothpick comes out smooth. Remove from pans. Cool and slice.
