GF CARROT CAKE image

Number Of Ingredients 14

1½ cups rice flour
½ cup soy flour
½ cup potato starch flour
1 teaspoon guar or xanthan gum
2 teaspoons baking soda
2 teaspoons cinnamon
½ teaspoon ginger
½ teaspoon salt
4 large eggs
2 cups sugar
1 cup mayonnaise
1 16 oz. can crushed pineapple
3 cups grated carrot
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees. Stir flours, guar gum, baking soda, spices , and salt together, set aside. Beat together eggs, sugar, mayonnaise, and undrained pineapple. Gradually beat in flour mixture until well mixed. Stir in carrots and pecans. Pour into greased and floured 9" x 13" baking pan. Bake for 45-50 minutes or until a toothpick inserted near center comes out clean. Let cool on rack then remove from pan.
