German Christmas Gingerbread image

This delicious gingerbread recipe is tasty and full of flavor. It is very different from traditional North American gingerbread but a wonderful Christmas tradition. Give it a try.

1 c butter, softened
2 c packed brown sugar
3 eggs
2/3 c honey
1/4 c orange liqueur
1 c sour cream
1/2 c orange juice (i use fresh squeezed)
1 2/3 c all-purpose flour
1 c whole wheat flour
4 tsp baking powder
2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1 c raisins
1 c blanched slivered almonds (optional)

Steps:

  • 1. Whisk together the flours, baking powder and spices.
  • 2. In a large bowl, cream the butter with the brown sugar. Beat in the eggs, then the honey, orange liqueur, sour cream and orange juice. Beat the flour mixture into the creamed mixture and then stir in the raisins and almonds. Turn batter into a greased and floured tube pan.
  • 3. Bake cake at 350 degrees F (175 degrees C) for 80 minutes or until it tests done with toothpick. Transfer to a rack to cool. Top with a dollop of whip cream or Cool Whip (if desired).
