Gardenia Pie image

Old Southern Summer Delight

Number Of Ingredients 9

1 cup white sugar
¼ teaspoon salt
2 eggs
2 tablespoons distilled white vinegar
1 tablespoon unsalted butter, melted
½ cup chopped pecans
½ cup golden raisins
½ cup flaked coconut
1 (9 inch) pie shell

Steps:

  • Preheat oven to 325 degrees F (175 degrees C).
  • In a large bowl, combine sugar, salt, eggs, vinegar and melted butter. Beat well. Fold in pecans, raisins and coconut.
  • Pour into unbaked pie shell. Bake on lower rack in oven at 325 degrees F (165 degrees C) for 30 minutes. Top should brown lightly.
  • Store in refrigerator.
