Fruit-Nut Gelatin Salad image

I have made this many times. An old-fashioned molded gelatin salad with the unusual and tasty combination of orange gelatin, pineapple, cream cheese, pimento, celery, walnuts, etc. This particular recipe doesn't call for marshmallows, but you could always add some if you like.

2 ½ cups crushed pineapple, with juice
1 (3 ounce) package orange flavored Jell-O®
1 (3 ounce) package cream cheese, softened
1 cup chopped pimento
1 cup heavy cream, whipped
1 cup diced celery
1 cup chopped walnuts

Steps:

  • In a medium saucepan, heat pineapple and juice over medium heat until boiling. Add gelatin and stir to dissolve. Remove from heat and refrigerate until partially set.
  • In a small bowl, blend the pimento into the softened cream cheese. Mix the gelatin mixture and cream cheese together, and then fold in the whipped cream, nuts and celery. Pour into a 1 1/2 quart mold and chill until firm.
