FRITTATA WITH CHEESE, SUN-DRIED TOMATOES, AND BASIL image

Number Of Ingredients 11

10 large eggs
1/4 c whipping cream
1 1/2 c crumbled feta
10 drained oil packed sun-dried tomatoes, finely chopped
Chopped spinach
4 green onion, thinly sliced
1/3 c fresh basil leaves, finely chopped
1/4 tsp ground black pepper
1/4 (1/2 stick) butter
1/3 c pitted Kalamata olives, thinly sliced
3 TBL freshly grated Parmesan

Steps:

  • Preheat boiler. Whisk eggs and cream in large bowl. Stir in feta, tomatoes, onions, basil, salt and pepper, and cooked sausage. Melt butter in large ovenprooff nonstick skillet over medium high heat. Add egg mixture, do not stir. Cook until eggs start to firm, about 5 min. Sprinkle with olives and Parmesan. Transfer skillet to broiler and cook ntil eggs start to puff and brown, 2 min. Using spatula, loosen edges, and bottom. Slide out on plate. Slice into wedges. Serve warm or room temperature.
