We love good fried catfish and probably everybody has their way of frying fish. This is how I do it. Nothing fancy, but it sure tastes good. Hope you like it.

Steps:
- 1. Combine the flour with the paprika, 1/2 tsp of the salt, the garlic powder, black pepper, onion powder and cayenne pepper.
- 2. In a separate shallow dish, mix eggs, milk and the remaining tsp of salt.
- 3. In another dish, combine the two cornmeals.
- 4. Dredge each catfish fillet in the flour mixture first, then the egg mixture, then the cornmeal mixture last.
- 5. Heat oil in a deep skillet and fry 3 fillets until golden brown on one side (about 5 minutes). Turn fish over and fry on the other side about 5 minutes until golden brown and flake tender. Remove and drain on paper towels. Add remaining 3 fillets and fry.
