Fricase de pollo (Chicken Fricase) image

This is a gret recipe. It came from my Grandmother. I hope you enjoy it.

Number Of Ingredients 10

2 lb chicken, cleaned and cut into serving size pieces
3 clove garlic, chopped
1 large bell pepper sliced
1 large onion, chopped
1 can(s) 8oz tomato sauce
1 c dry cooking wine
1 lb potatoes , cut into bite size pieces
salt and papper to taste
half a lime and half an orange, juice only
1/4 c spanish olives

Steps:

  • 1. Marinade chicken pieces in garlic cloves, citrus juice, onion and bell pepper for at least one hour. Heat oil and brown chicken. Add onion, pepper and citrus from the marinade. Add tomato sauce, olives, cooking wine, salt & pepper. Add water to cover the chicken, cook till chicken is almost done. Add the potato pieces in the last 20 minutes of cooking.
  • 2. Serve over white rice.
