Fresh Rhubarb Crisp image

Yeah for Spring! Just saw rhubarb in the store, so made the first crisp of the season! YUM! (from Great American recipes)

Number Of Ingredients 9

3 c sliced fresh rhubarb
1 tsp cinnamon
dash(es) salt
TOPPING
3/4 c flour
1 c sugar
1/3 c butter
1/3 c sliced almonds or chopped walnuts
whipped cream or vanilla ice cream, if desired

Steps:

  • 1. Preheat the oven to 350 degrees. If the rhubard is very thick, peel it first to remove some of the outer skin.
  • 2. Place sliced rhubarb in a 6x10 inch baking dish. Sprinkle witht the cinnnamon and salt.
  • 3. In a bowl, combine the flour and the sugar. Cut in the butter until crumbly. Add almonds or walnuts. Sprinkle the crumbly mixture over the rhubarb.
  • 4. Bake for about 35 minutes or until golden brown and rhubarb is soft and cooked. Let cool slightly.
  • 5. Serve with whipped cream or vanilla ice cream, if desired (and of course it is desired!)
