Fresh Cranberry Salad image

I have made this with red delicious apple and with granny smith apple, with and without the lemon juice, and with and without the nuts. The great thing about the recipe is the flexibility to tailor to your specific taste.

10-12 oz cranberries, fresh
1 navel orange, large
1 apple (red delicious or granny smith)
1/4 c pecans, in pieces (or chopped)
2 Tbsp sugar
1 Tbsp lemon juice (optional)

Steps:

  • 1. Wash cranberries, apple, and orange. Do NOT peel apple or orange.
  • 2. Cut apple into quarters and core out seeds. Cut navel orange in quarters and remove pith from center and any seeds.
  • 3. Place cranberries, apple slices and orange slices in food processor and pulse until finely chopped (do not overdo this step).
  • 4. Transfer to mixing bowl and add sugar, nuts and lemon juice. Stir thoroughly to mix.
