3/4 c milk
1 Tbsp white vinegar
1 c all-purpose flour
2 Tbsp white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 large organic brown egg
2 Tbsp melted butter
1/2 c chocolate chips, can also use blueberries or strawberries

Steps:

  • 1. Combine milk with vinegar in a medium bowl and set aside for about 5 minutes.
  • 2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  • 3. Whisk egg and butter into milk.
  • 4. Pour the wet ingredients into the flour mixture and whisk until lumps are gone.
  • 5. Gently fold in chocolate chips.
  • 6. Heat a large skillet or griddle and coat with cooking spray. Pour 1/4 cupfuls of batter onto griddle and cook until bubbles appear on the surface.
  • 7. Flip with a spatula and cook until browned.
  • 8. Enjoy with some bacon or sausage and a cup of coffee and orange juice.
