FLORENTINE LASAGNE image

8 oz lasagne noodles
15 oz ricotta
2 cups spinach
2 eggs
1 jar spaghetti sauce
2 cans tomato paste
1 lb shredded mozzarella
1/2 lb mushrooms
1 carrot
2 shallots
2 cloves garlic
2 tbsp parmesan
1 bunch fresh basil
salt & pepper

Steps:

  • Preheat oven to 400F Cook and drain pasta according to instructions Cut spinach into thin strips Cut mushrooms into slices Chop shallots and basil Grate carrot Lightly beat eggs Combine ricotta, spinach, eggs, salt & pepper Saute garlic, shallots, mushrooms, carrot, basil Combine spaghetti sauce and tomato paste Spread spaghetti sauce mix at bottom of pan Layer with lasagna, 1/2 of ricotta, 1/2 of mushrooms, spaghetti sauce, and mozarella Repeat layers once Top with lasagne, spaghetti sauce, and mozarella Bake uncovered for 35-40 minutes
