Steps:
- Thinly slice the potatoes and place 1/4 in two layers at one end of a large piece of aluminum foil. Repeat for each serving. Thinly slice the onion and place this on top of the layers of potato. Clean and fillet the fish and put a fillet (1/2 lb) on top of each of the potato and onion portions. Top with chopped tomatoes and basil. Drizzle with olive oil and season with salt and pepper. Fold one end of the foil over the other and seal the edges tightly (can be made into the shape of a fish). Cook in the oven at 400 for about 20 minutes. Serve in the opened foil.
