FINGERLING POTATOES WITH PARMESAN BUTTER image

Lately I've been getting a lot of these marvelous fingerling potatoes from my organic delivery company. In looking for different ways to prepare them, I came up with this simple and delicious recipe.

3 lb fingerling potatoes
1/4 c (1/2 stick) butter
salt and pepper to taste
1/4 c parmesan, romano, and asagio cheeses
1/2 tsp dried rosemary

Steps:

  • 1. Scrub potatoes but do not peel; dry off and set aside.
  • 2. In a small saucepan, melt butter. Add salt and pepper; stir.
  • 3. Roll potatoes in butter and place on a baking pan that has been sprayed with cooking spray.
  • 4. Using a pair of tongs, turn the potatoes as you sprinkle them with the cheeses and then the rosemary.
  • 5. Bake in a preheated 350-degree oven for about 40 minutes or until fork-tender. Serve with more butter or sour cream.
  • 6. May also bake in a hotter oven (450) for 20 minutes.
