FIG, BLUE CHEESE AND PROSCIUTTO FLATBREAD image

2 cups of dried figs
1/2 cup port wine
1/4 cup balsamic vinegar
1/4 cup olive oil
1 garlic clove, minced
2 ounces prosciutto
6 ounces blue cheese, crumbled

Steps:

  • 0. Pizza dough as usual with Italian style flour 1. Remove the stems from the figs, then cut the figs into small pieces. 2. Place figs and wine in a saucepan and simmer over low heat until figs are plump and most of the liquid has evaporated. 3. In a small bowl whisk together oil, vinegar and garlic. 4. Cut the prosciutto horizontally into half-inch strips. 5. Brush the dough with vinaigrette and top with figs, prosciutto and blue cheese. 6. Bake until the cheese has melted and the flatbread is crisp, about 5 to 7 minutes. Slice and serve warm or at room temperature.
