FENNEL AND ORANGE SALAD WITH TOASTED PISTACHIOS image

Yield 4 cups

Number Of Ingredients 9

2 navel oranges, peeled, quartered and thinly sliced (about 1 1/2 cups)
1 small bulb fennel, quartered, cored and very thinly cliced crosswise (about 2 1/2 cups)
1/2 cup radishes, very thinly sliced
1/2 cup jicama, peeled and diced
1/4 cup cilantro, coarsely chopped
2 Tbsp olive oil or pistachio oil
1 Tbsp plus 1 tsp lime juice
salt and pepper
6 Tbsp pistachio nuts, shelled, toasted and chopped

Steps:

  • 1. Combine orange slices, fennel radishes, jicama, cilantro, oil, lime juice, salt and pepper in a bowl. Toss gently. 2. Divide salad between serving plates. Sprinkle with nuts.
