Fancy Chicken Spaghetti image

A true comfort casserole kicked up with white wine and mushrooms. Found this in a thrift store box of hand-written recipes. 30 minutes of cooking time is oven time.

3 pound(s) whole chicken
8 ounce(s) thin spaghetti
8 tablespoon(s) butter, divided use
4 tablespoon(s) flour
1 cup(s) heavy cream
1 cup(s) chicken broth
1 cup(s) mayonnaise
1 cup(s) sour cream
1 cup(s) grated parmesan cheese
2 tablespoon(s) lemon juice, freshly squeezed
1/3 cup(s) dry white wine
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) cayenne pepper
1 teaspoon(s) dry mustard
1 teaspoon(s) kosher salt
8 ounce(s) mushrooms, sliced

Steps:

  • Cut chicken in pieces and boil until done. Remove and bone the chicken; set aside. Bring the chicken broth to a boil.
  • Break spaghetti in half and cook until al dente in the boiling broth. Reserve a cup of the chicken broth, then drain the spaghetti. Set aside.
  • Make the sauce: In a large saucepan, melt 4 tablespoons of the butter. Add flour and cook until bubby, plus one more minute. Add the cream and the reserved cup of chicken broth. Stir until thickened.
  • Add the mayonnaise, sour cream, parmesan, lemon juice, wine, and the seasonings. Stir until incorporated.
  • In a separate pan, saute the mushrooms in the remaining 4 tablespoons butter.
  • In the large saucepan (or a large bowl, if not big enough), add the sauteed mushrooms, cooked chicken, and spaghetti. Gently combine until everything is coated. Pour into a 3 quart casserole (or a 9x13 baking pan). Sprinkle with paprika and additional freshly grated parmesan on top. Bake for 30 minutes.
