This is the easiest and lightest macaroni & cheese I have ever had. Eunice (a friend of my Mom's) made this for us the first time. I couldn't get enough. I think you'll love it, just as we do.

Steps:
- 1. Preheat oven at 350. Spray or grease a small baking dish.
- 2. Boil macaroni by box direction. Drain & return to pot. Salt & pepper to taste.
- 3. Mix eggs & milk. Scramble and pour over macaroni. Add 8 oz. cheddar and mix well.
- 4. Pour into prepared dish. Top with remaining cheese. Bake for 45-60 minutes until golden brown.
