ELLEN'S SMOKIN' BLUEBERRY COFFEE CAKE image

Voted best new dish of the year by my boyfriend. This coffee cake is sweet, easy and delicious! Adapted from a Betty Crocker recipe.

TOPPING
1/2 c sugar
1/3 c all purpose flour
3/4 tsp cinnamon, ground
1/2 stick butter
CAKE:
2 c all purpose flour
3/4 c sugar
1/4 c shortening or butter, softened
3/4 c milk
1 egg
2 1/2 tsp baking powder
1/2 tsp salt
1 1/2 - 2 c fresh blueberies
GLAZE:
1/2 c powdered sugar
1/4 tsp vanilla extract
2 tsp hot water
1/4 tsp lemon rind, grated

Steps:

  • 1. In a small bowl, mix 1/2 cup sugar, 1/3 cup flour and the cinnamon. Cut in the butter with a fork until crumbly. Set aside.
  • 2. In a large bowl, stir together all coffee cake ingredients except blueberries; beat with a spoon for 30 seconds. Fold in blueberries. Spread batter into a greased 9" square pan. Sprinkle with topping.
  • 3. Bake in a preheated 375-degree oven on center rack for 45 to 50 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes.
  • 4. In a small bowl, mix all glaze ingredients until smooth and thin enough to drizzle. Drizzle over warm coffee cake.
