EGGS IN HEAVEN
I've seen recipes on cooking sites for 'Eggs in Purgatory', but I'm not too keen on serving fried eggs with potato pancakes and tomato sauce! The sound of that just didn't appeal to me, so I decided to make it in a way that I know my family would love. This is a potato pancake with a creamy cheese sauce and a fried egg. Well, it worked just fine because my family loved it!

Steps:
- Place 1/4 cup of the warm mac & cheese sauce in the center of a plate.
- Place the warm potato pancake ontop. Sprinkle with 1/4 of the shredded cheddar cheese.
- Now place the fried egg ontop of the shredded cheddar. Serve warm.
