EGGPLANT TOMATO STACKS image

1 large long eggplant, peeled, sliced lengthwise into 1/2 inch slices
2 eggs, beaten
1/2 cup matzo meal or potato starch seasoned with dried parsley,salt and pepper
oil for frying
3 cups marinara
fresh chopped parsley for garnish

Steps:

  • preheat oven to 375 dip eggplant in egg and then into the matzo meal heat oil in large saute pan fry eggplant on both sides lightly grease 9 x 13 pan cover bottom with thin layer of sauce place one layer of eggplant, top with sauce repeat, topping with sauce bake covered 20 minutes garnish with fresh chopped parsley cover with thin layer of sauce
