Do you love Eggnog? Well, you will enjoy this quick bread. It is really hard to eat just one slice. This bread has a beautiful golden color to it just like eggnog. The glaze makes it even tastier. Number Of Ingredients 12

2 large eggs
1 c sugar
1 c dairy eggnog
1/2 c butter, melted
2 tsp rum extract
1 tsp vanilla extract
2 1/4 c all-purpose flour
2 tsp baking powder
1/4 tsp nutmeg
EGGONOG GLAZE
3/4 c confectioners' sugar (sift your sugar to assure no lumps)
enough eggnog to make a glaze...pour a little at a time into sugar

Steps:

  • 1. Beat eggs, in a large bowl, then add next 5 ingredients, blending well. Add remaining ingredients and stir until just moist. Pour into a greased 9" X 5" loaf pan and bake at 350 degrees for 45 to 50 minutes. Makes one loaf.
  • 2. Eggnog glaze: 3/4 cup confectionery sugar enough eggnog to make it a glaze Stir together and drizzle on bread.
  • 3. Last night, I made a double batch of this recipe and used it for mini bundt cakes and mini loaves. It made 14 of them and they baked about 20 - 25 minutes.
  • 4. 12-12-12 I just hosted a Cookie/Fudge/Holiday Bread Exchange that I calle Sweets & Treats Exchange. I chose to do all three exchanges and of course I to make Eggnog bread! LOL Here it is, all wrapped and ready to go.
